RASPBERRY CRUMBLE BARS
INGREDIENTS (RASPBERRY FILLING):
2 1/2 cups raspberries
2 tablespoons flour
1 tablespoon cornstarch
1/3 cup white sugar
1 lemon for juice
INGREDIENTS (CRUMBLE LAYER):
3 cups rolled oats
2 cups brown sugar
1 teaspoon baking powder
1 1/2 cups melted butter
3 cups flour
1/2 teaspoon salt
DIRECTIONS:
1. Preheat oven to 350°F.
2. Mix raspberries, sugar, flour, cornstarch + lemon juice.
3. Mix oats, flour, brown sugar, baking powder, melted butter + salt into a crumble-like mixture.
4. Press 2/3 of the mixture into the bottom of a 9x13-inch pan lined with parchment paper. Bake for 10 minutes.
5. Arrange raspberry layer on top of baked bottom layer. Sprinkle with remaining crumble + bake an additional 25-30 minutes.
